For the letter K, it’s kaju badam katli made in Instant Pot. I tried this recipe from Ashley’s My Heart Beets and it turned out real perfect. Head over to her space for detailed instructions about this recipe. The most important thing to note about this recipe is that it should be made only in a 6 qt instant pot and the quantities cannot be scaled.
I am really thrilled about this recipe because I am not so good at making sugar syrup. So this pressure cook method to get the syrup right is perfect for someone like me.
I ground some cashews to make cashew powder, but the almond flour is readymade. I bought a big bag of almond flour from Costco, I am trying to use it up- that’s why I decided to go for a cashew and badam katli, but you can use only ground cashews or ground almonds by itself too.

- 1 cup sugar
- 6 tablespoons water
- 1 tablespoon ghee
- 1 cup ground cashews
- 1 cup almond flour
- Add the sugar to the inner pot of instant pot. Add the water, mix it in to combine evenly. Cook for 10 minutes in Manual mode. Quick release the pressure.
- Add the ghee and the ground cashew powder and almond flour and mix in using a spatula until it starts to leave the bottom of the pan. If the dough is wet, you might have to turn on the sauté mode for a minute or two until it comes together.
- Transfer into a silicone mat or a greased plate. Cover with parchment paper and roll it out. Remove parchment paper and wait for 10-15 minutes for the katli to firm up. Cut into pieces using a pizza cutter.
