Theme : Dish for each course
I am here with a quick and simple main course that was trending big on TikTok last year. You can make this quesadilla wrap with whatever you have in your fridge/ pantry. The variations are endless and a search on TikTok or any social media would give you thousands of ideas to get started.
You can use a readymade tortilla wrap like I did or you can use a chapati too. The fillings I have used are cheese, tomatoes, avocados, veggie and black bean filling and spinach. You can use any leftover dry curry also as a filling. The simplicity and versatility of this dish makes it a perfect lunchbox recipe too.
Here is how I prepared it:
- 1 tortilla
- 2 round slices of tomato
- 3-4 baby spinach
- 1 slice of cheese
- Black Bean Filling
- 2 thin wedges of avocado
- Make a cut from the center of the tortilla to one end.
- Add black bean filling in one quarter of the tortilla, avocados and tomato on the next quarter, spinach on the 3rd quarter and then finally cheese on the last quarter of the tortilla.
- Fold the bean filling over the avocados and then fold it over spinach and finally over the cheese. You will end up with a filled tortilla that’s one quarter of its original size.
- Toast this on a pan or a grill with some oil or butter until the sides are browned. Serve warm.
