Another one pot pasta recipe from Urvashi Pitre’s Instant Pot cookbook . She mentions that this recipe is inspired from a traditional Polish dish called Haluski. I find this recipe to be comforting and very easy to make. All you need to do is prep the veggies and add everything to the pot and pressure cook, done with lunch or dinner…Meal prep cannot get easier than this for sure!

Now a days I just add readymade pasta sauce to cooked pasta and call it dinner, so I like it that this one is more filling with a lot more veggies than my usual version. Cabbage is an unusual choice for pasta but it works! Along with mushrooms and carrots, there is a lot of flavor and it tastes delicious! You can find the original recipe here on the author’s blog.

Ingredients:

  • 1 tablespoon butter
  • 4 cups chopped cabbage
  • 1 cup chopped mushrooms
  • 1 large onion, chopped
  • 2 teaspoons dried herbs
  • 1 teaspoon ground pepper
  • 2 cups bow tie pasta (I used penne)
  • 1 1/2 cups water
  • 1/2 cup chopped carrots
  • 1/2 cup frozen corn or peas
  • Salt as needed

Method:

  1. Prep the vegetables.
  2. Add everything to the inner pot of Instant Pot. Mix well to combine.
  3. Cover with the lid and pressure cook for 5 minutes. Quick release after ten minutes. Spoon into bowls and serve!

  2. Your bowl looks fantastic Rajani…cacan’t imagine cabbage though in pasta…I can’t get to become so health conscious..however, I get it that to make a quick wholesome meal, this bowl is so filling! love your capture.
