Theme : A-Z recipes, something sweet
For the letter Q, I have quinoa cookies with bananas and chocolate chips. This is more of a breakfast cookie than a dessert cookie since it doesn’t have any added sugar. The sweetness comes only from banana and the chocolate chips.
The recipe is from this space, it’s more of a guide than an absolute one. What I mean is, the amount of flour/whole flour/almond flour will vary depending on the wet ingredients (banana and eggs). I used a combination of whole wheat flour and some almond flour here.
I like quinoa and use it as a rice substitute often. I serve it with everyday South Indian food. I also cook it in bulk – that way I don’t have to cook that little amount everyday. By bulk I mean I cook one cup or 1.5 cups of quinoa and once that is over, I will make it again.

This recipe was easy for me to prepare since I had cooked quinoa ready. The recipe has only few ingredients. It starts with combining two ripe mashed bananas with two eggs. Add a pinch of salt. Now add 1.5 cups cooked quinoa and start off with 1/4 cup four/whole wheat flour and add another 1/4 cup if the consistency is too runny. For me, I used frozen bananas so I ended up adding 1/4 cup more of almond flour as it was still wet. Add 1/2 cup of chocolate chips and bake at 350F for 15 minutes.
I would also suggest cooking this and finishing it the same day. The bananas make it brownish by next day, it’s not unappetizing but just something to keep in mind.On the whole, these are healthy and easy cookies to make for either breakfast or snacking or as a travel snack.
