I always feel that cooking and clicking is the easiest part of blogging.
Its writing the recipe and introduction that’s time consuming. I always get stuck when writing intros. Once you get into the flow, you will be fine. But it’s getting into the flow that’s problematic.

The difficulty multiplies with the medium which you are using. I personally find it extremely difficult to get a post published from the phone. I am talking about posts with all the pictures and the recipe written in already. All that’s left is writing the introduction and posting it. IPad comes in a close second place after the phone.

I am comfortable with laptops. There is a psychological security there. May be its just the bigger screen that makes it easier! Who knows!!?

Ingredients:

  • 2 teaspoons oil
  • 1 teaspoon mustard seeds (optional)
  • 1 green chili, sliced into thin rounds
  • 1″ ginger piece, peeled and minced
  • 1 small onion, chopped fine
  • 1/2 small tomato, chopped fine (optional)
  • 1/2 teaspoon turmeric powder
  • 3 large eggs
  • 1 tablespoon milk
  • salt and pepper

Method:

  1. Heat oil in a pan. Add 1 teaspoon mustard seeds.
  2. Once it splutters, add one chopped green chilli and 1″ piece of finely chopped ginger. Follow it up with one small chopped onion.
  3. Cook the onions till they are pink. Add half of a small tomato, chopped fine.
  4. Let it cook until the tomatoes soften a bit. Add the turmeric powder, salt and pepper. Mix well and cook.
  5. In a bowl, whisk three large eggs with some milk to moisten it. I used about a tablespoon of milk. This step is optional, you can add the eggs directly into the pan as well.
  6. Add the eggs to the pan and keep stirring it bringing it to the center of the pan, until the eggs are cooked completely.
  7. Serve as a side dish to rice or as a sandwich filling.

Love your pictures and as Pavani says I too crack it straight on the pan..:)..for me depending on my condition different tasks become difficut…mostly cooking at the right time becomes tough as I mostly cook before serving and clicking becomes so difficult..writing I can yap away to glory most times..LOL

  2. I’m comfortable in writing posts from laptop too…I seldom venture from my routine or comfort zone…I can understand your plight. Bhurji looks awesome.

  3. Egg burji is one of the popular dishes for egg lovers.At my In laws house if there is nothing to cook,chalo let’s make anda bhurji that’s the slogan.

  4. Bhurji looks wonderful. I want to feed my boys egg at least couple of times a week. I have not gone beyond making hard boiled eggs. This one would work great inside a bread for breakfast. Bookmarking this :)

  5. Even I am comfortable drafting and scheduling my posts from laptop. However, off late I am making rough drafts on my mobile in Google docs. Guess when I do that? During my walking to keep up with my daily 10k step count. I do most of the rough draft on mobile, copy paste it to my blog post and make the final edits on my laptop.
    Bhurji looks great!

  7. Totally agree with you that writing part becomes the most difficult sometimes. Especially the person like me who is otherwise also very reserved and don’t talk much. Egg bhurji is really such a dish that comes to your rescue if you are short of time or there are no veggies in the kitchen.

  8. This is our family favorite dish.
    Whisking in the eggs before adding to the pan might be the key to getting that perfect egg bhurji texture. Lazy me, cracks the eggs straight into the pan. Will take a minute and whisk them before adding next time :-)
